Background

Having reached his 41st milestone this year, it is clear upon reflection that hospitality was always in his blood.

He grew up in the West of France as the son of "Boulanger-Pâtissier" with a family owned bakery store.

From the tender age of 14 and working for the family business, the art of hospitality and the desire to serve were passed on to him.

After 20 years experience in the world’s finest hotels within the Luxury Industry in various countries,

He has settled in the Cote D’Azur, the South of France, in Nice.

 

Graduating in 2001 with a University Degree in Hotel & Catering specialised in "Marketing and Hotel Management" allowed him to consider the takeover or creation of a hotel establishment. He enriched his school career with international trips such as Ireland, the United States of America, Brazil, the Caribbean, Bahrain, the United Arab Emirates, Saudi Arabia, Qatar, the Maghreb as well as many capitals in Europe.

 

His first experience in the luxury hotel industry began in 2001 at ROYAL-THALASSO in La Baule, Lucien Barrière group.

 

Then follows a succession of professional experiences, each unique and enriching in the development of his career.

 PLAZA-ATHÉNÉE PARIS

It was in 2003 that his great experience in the world of luxury hotels began. Nicolas was a Front Desk Supervisor at the reception of the Plaza-Athénée, a timeless Palace where He could write a book of his 5 years spent there.

François DELAHAYE, Chief Operating Officer of the Dorchester Collection and General Manager of the Plaza-Athénée has been a mentor during all these years spent at the Dorchester Collection. Nicolas has continually been guide by his wisdom and management style he imparted with him, an understanding of respect to all coupled with sincerity.

It was also during this period that he was able to approach Alain DUCASSE, a famous Michelin-starred Grand Chef, who remains in his eyes, one of the most professionally inspiring Chef known and recognised throughout the world. His “Savoir-Faire” and his talent nourished in Nicolas a passionate well-being for "Haute-Couture" cuisine.

THE DORCHESTER LONDON

From 2008, Nicolas had the pleasure of continuing his professional journey in London at the Dorchester Hotel, an establishment of the same group for a significant experience of 4 years. 

As Assistant Guest Liaison Manager and Duty Manager, he was one of the privileged few who were able to participate in the exceptional opening of Alain DUCASSE's restaurant at the Dorchester, a three-starred in the Michelin Guide from the second year of opening! He also had the pleasure of participating in the openings of the 45 Park Lane Hotel, and the Coworth Park Hotel, two other establishments of the Dorchester Collection group. This was an opportunity to train new employees, to welcome the press, the first customers and to support the start-up of these two entities.

It was at the Dorchester where Nicolas learnt more about the “Private Butler Service” and participated in exceptional events which included famous personalities such as Her Majesty Queen Elizabeth II and her family who honoured them with their presence in the Ballroom that can accommodate up to 1000 Guests !

​HÔTEL HERMITAGE MONTE-CARLO

In 2012, another major turning point in his professional life where he would remain for the next 6 years, that of Monaco and Luca ALLEGRI, Senior Vice President Operations of the Oetker Collection group, President / Managing Director of Bristol in Paris, previously Managing Director of hotels of the Société des Bains de Mer Spas and Resorts in Monaco. That year, Mr. ALLEGRI gave to Nicolas his next opportunity and offered him the position of Front Office Manager at the Hermitage Monte-Carlo Hotel, 278 rooms and suites. It is with pride to say that he found himself in this new role alongside Pascal CAMIA, previously General Manager of the Hermitage and now Chief Operating Officer of SBM. As member of the hotel's Executive Committee in charge of rooms, all their efforts focused on a strategy of evolution of Customer Service with a view to increase room turnover - and they achieved an increase of 36% six years later! Nicolas was then left with the management of Sales and the Operational organisation of accommodation and unique events including the GRAND PRIX F1 of Monte-Carlo, and of WEOY (World Entrepreneur Of the Year) for the 3 vintages 2016-2017- 2018!

BRACH PARIS 

More recently in 2018, Nicolas devoted himself to working on an extraordinary and challenging project: the opening of Brach Paris and he was appointed Deputy Hotel Director.

Putting together all his years of managerial experiences into action with the 160 employees within this establishment and orchestrating 2 major events : the pre-opening and the official opening for the customers. For Nicolas, It is with pride and joy to have participated in this new concept of Luxury Lifestyle hotel "casual-chic" alongside a talented designer like Philippe STARCK to add to his portfolio.

The Brach is distinguished by a 5-star hotel with 59 rooms, a restaurant seating 150, complete with a bar, a terrace that accommodates 100 seats, a vegetable garden on the rooftop and a gym club with already 1000 members.
